‘Friday night fakeaway’: Air-Fryer Honey Chilli Chicken and Sticky Rice
Chef, author and TV presenter, Adrian Martin, joined us on the Bord Bia Quality Kitchen Stage at Bord Bia Bloom this year, sharing some tasty tips for cooking with air fryers. This delicious dish is a great option for a quick and easy fakeaway on Friday, or any day!
Serves 4
- 3-4 Quality Mark chicken fillets, cut into pieces
- 2-3 tablesp. soy sauce
- 100g cornflour
- 100g self-raising flour
For the sauce :
- 1 banana shallot, sliced
- 3 cloves of garlic chopped
- ½ red pepper, sliced
- ½ green pepper, sliced
- 1 tablesp. rice wine vinegar
- 2 tablesp. sweet chilli sauce
- 2 tablesp. honey
- Juice of half a lemon
To serve :
- Sticky glutinous rice
- Sliced spring onions and chillies
Stir the chicken in a bowl with the soy sauce. Mix the two flours together. Coat the chicken in the flour and then pop them into the air fryer with some spray oil at 200°C for 15 minutes.
In a frying pan sweat the shallot, garlic and peppers in some oil until softened. Add the rest of the sauce ingredients and reduce the heat to simmer lightly. Add the chicken to the sauce to coat it and make it sticky. The cornflour on the chicken will thicken this nicely.
Serve on some cooked sticky rice and sprinkle with the spring onions and chillies.
